Roasted Red Pepper & Goat Cheese Scramble
Yields 1 Serving
Ingredients
1 - 2 eggs
2 - 4 teaspoons finely chopped roasted red peppers
2 - 4 teaspoons goat cheese (optional substitute: gruyère cheese)
1 pad butter
Salt and freshly ground black pepper, to taste
Method
Whisk egg(s) in a mixing bowl until light and frothy.
Add red peppers and goat cheese to the mixing bowl.
Melt butter in a sauté pan over medium heat. Add egg mixture to pan and stir continuously to combine. When eggs are no longer loose, transfer to a serving plate.
Serve immediately and enjoy.
