Herb Roasted Carrots
Yields 1 Serving
Ingredients
1 bunch whole rainbow carrots, cleaned with stems in tact
1 tablespoon Herbs de Provence
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
Fresh thyme for garnish
Method
Preheat oven to 425 degrees F.
Scrub carrots to remove access root fibers (“hairs” on surface. Coat with olive oil. Season with salt, pepper and Herbs de Provence. Arrange in a single layer on a sheet pan.
Transfer to the oven and roast for 25 - 35 minutes, or until charred and fork tender. Shake the pan after about 15 minutes to release the carrots from sticking.
Garnish with fresh thyme. Serve immediately and enjoy.
