Farro is a healthy, satisfying and versatile side dish that pairs as well with salmon as chicken or pork. The addition of herbs and parmesan enhance it’s natural nutty flavor and can be modified to complement the rest of the entrée.

Herb & Parmesan Farro
Yields 2 - 4 Serving
Ingredients
1/2 cup farro, rinsed
1 - 2 parmesan rinds
2 - 3 sprigs fresh rosemary and/or thyme
1 - 2 dried bay leaves
3 cups water
1/2 teaspoon salt
Fresh thyme or rosemary for garnish
Method
Bring salted water to boil in a pot.
Add farro, herbs and parmesan rinds. Return to a boil then reduce to a simmer. Simmer on low uncovered for 30 minutes or until all liquid is absorbed and farro is tender. Stir occasionally.
Remove herbs and parmesan rinds. Transfer farro to serving dish.
Garnish with fresh rosemary or thyme. Serve immediately and enjoy.
