Chilled Peach and Nectarine Soup (Dairy Free)

Chilled Peach and Nectarine Soup
Yields 4 Cups
Ingredients
3 medium ripe peaches, peeled and seeded
3 nectarines, seeded
1/3 cup unsweetened full fat canned coconut milk, plus more for garnish
Olive oil, for garnish
Chopped pecans, for garnish
Method
Whisk coconut milk until well blended and set aside. To a blender, add peaches, nectarines, coconut milk. Process until well blended, about 60 seconds.
Refrigerate soup for at least one hour prior to serving.
Garnish with a drizzle of coconut milk and olive oil. Sprinkle with chopped pecans. Serve immediately and enjoy!
