Chilled Peach and Nectarine Soup

Yields 4 Cups

Ingredients

  • 3 medium ripe peaches, peeled and seeded

  • 3 nectarines, seeded

  • 1/3 cup unsweetened full fat canned coconut milk, plus more for garnish

  • Olive oil, for garnish

  • Chopped pecans, for garnish

Method

Whisk coconut milk until well blended and set aside. To a blender, add peaches, nectarines, coconut milk. Process until well blended, about 60 seconds.

Refrigerate soup for at least one hour prior to serving.

Garnish with a drizzle of coconut milk and olive oil. Sprinkle with chopped pecans. Serve immediately and enjoy!
