Charred Brussels Sprouts

This incredibly simple recipe was inspired by the crispy brussels sprouts frequently featured on restaurant menus. I wanted to maintain the charred texture and flavor while avoiding heavy sauces or unhealthy preparations. If you like crisp brussels sprouts as much as I do, this recipe is for you!

 

Recipe

Charred Brussels Sprouts

Yields 2 - 4 Servings

Ingredients

  • 2 cups brussels sprouts, trimmed and sliced vertically

  • Salt and freshly ground black pepper, to taste

  • Aged balsamic vinegar, for finishing

Method

Heat a cast iron skillet over high heat.

Lay sprouts in the skillet cut side down. Season with salt and freshly ground black pepper. Let cook undisturbed until cut sides are blackened. Lower heat to medium high, drizzle with olive oil and stir. Cook a few minutes more, stirring occasionally, until sprouts turn a vibrant green color. They should be tender but not soft.

Remove from heat and transfer to a serving plate. Drizzle with balsamic vinegar.

Serve immediately and enjoy!

Note:

When selecting balsamic vinegar for this recipe, look for an aged vinegar with the ingredient “grape must”. This will ensure that the vinegar is thick and sweet, which pairs perfectly with brussels sprouts.
