Berry & Banana Parfait with Walnut-Date Crumble

Red, white and blue! This July 4th-inspired parfait is the perfect summer breakfast or healthy and simple dessert.

Walnut-date crumble should be well blended but still slightly chunky.

Berry & Banana Parfait with Walnut-Date Crumble

Yields 2 Servings

Ingredients

Parfait:

  • 3 ripe bananas

  • 1/2 cup fresh blueberries

  • 1/2 cup fresh raspberries

  • 4 fresh blackberries, for garnish

Walnut-Date Crumble:

  • 8 ounces raw, unsalted walnuts

  • 8 ounces dried dates

  • 1/2 teaspoon fine sea salt

Method

To a blender, add banana and purée until smooth.

To a food processor, add walnuts, dates and salt. Process until well combined but still slightly chunky. (Note: you will have reserve crumble. Sprinkle it atop yogurt for added flavor and texture!)

In a clear glass or tall container, distribute half of the banana purée on the bottom of the glass. Add a double layer of blueberries and top with a sprinkle of walnut-date crumble.

Distribute the remaining banana purée in an even layer. Top with a single layer of raspberries and sprinkle liberally with walnut-date crumble.

Garnish with blackberries.

Serve immediately and enjoy!
