Chef Tom Ashcraft has over 20 years of professional culinary experience. Prior to joining Sous Chef, Tom served as head banquet cook for The Ritz-Carlton in Boston, gaining extensive experience conducting live cooking demonstrations for weddings, corporate events and sports teams.

Culinary Experience
Entrée
Mushroom, Miso Butter, Kale and Pecorino Linguine
Yields 2 - 4 Servings
Ingredients:
1 lb. linguine
2 - 3 tablespoons butter
1 cup sliced mushrooms
1 teaspoon miso paste
1 cup kale, roughly chopped (optional substitute: spinach)
1/4 – 1/2 cup pecorino cheese (optional substitute: Romano or Parmesan)
Method:
Bring salted water to a boil in a large pot. Cook the linguine until al’ dente. Strain and set aside to reserve.
In a saucepan, warm butter over medium-low heat to start the browning process. Add mushrooms once the butter starts to brown, stirring occasionally. Stir in miso paste. When mushrooms are tender and nearly cooked through, stir in kale.
Mix pasta into the brown butter mixture. Add pecorino cheese and stir to combine.
Twirl pasta with tongs to make a nest with the pasta on a serving plate. Garnish with additional pecorino cheese. Serve immediately and enjoy!
